Shrimp Salad

In summer time, salads are always a cool option to beat the heat and this one is very simple to make.

I must add that with Abbondante™ on this salad, you may want to taste it BEFORE you add any dressing!

Yes, you may have enough flavor in this one that dressing might just be overrated!

Healthier option? Maybe so!

Ingredients:

*One head heart of romain lettuce

*1 lb cooked, de-veined shrimp, 25-30 count, thawed

*1/2 cup red onion

*1 can large black pitted olives

*2 large tomotoes

*1/2 Large cucumber

*1/2 cup snow peas (if desired)

Serves 4-6

Preparation:

In a large bowl,

1. Peel and slice cucumber and slice red onion.

2. Chop tomato, snow peas and shrimp.

3. Tear lettuce into 2-3″ pieces.

4. Drain and add olives.

5. Toss all ingredients in bowl with a sprinkle of Abbondante™ seasoning.

Add your favorite dressing or Extra Virgin Olive Oil if you want, but we just eat it like that!
