Scallops With Wine Sauce

Scallops with wine sauce

This dish will take literally less than 45 minutes to prepare!

Use any vegetable medley to compliment this dish!

If you enjoy seafood, scallops with wine sauce is a great way to show it!

Ingredients:

*1 lb Large sea scallops (thawed and rinsed if frozen)

*1 lb angel hair pasta

*3 small roma tomatoes or 1/2 cup cherry tomatoes

*1/4 cup fresh parsley

*1 cup fresh spinach

*2 cloves fresh garlic

*1/4 cup red onion

*Boccafina-Abbondante seasoning

*Extra virgin olive oil

*1/2 cup your favorite white wine (we use Pinot Grigio)

     Serves 4

Preparation:

Prepare a pot of water to cook pasta with 1 TBSP extra virgin olive oil.

While pot of water heats up….

Finely chop garlic, parsley and red onion and cut  or tear spinach leaves in halves or quarters

Add pasta once pot of water begins to boil

Heat pan with 3 TBSP extra virgin olive oil to medium heat

Add chopped red onion and garlic and saute for about 1 minute on medium heat. (allow onions and garlic to just barely brown)

Add scallops, parsley, spinach and white wine and simmer for 2 minutes

Don’t foget to check the pasta! (Check by scooping a strand out and tasting for perfect pasta)

Drain the pasta, add a portion to a plate and place several scallops on top, then pour some juice over the top

Add boiled or steamed vegetables to complement this dish
