Broccoli and Tomato Omelet

A Simple Omelet for a most flavorful morning!

You may just have the neighbors come visit you for breakfast when cooking this one!

Ingredients:

*1 cup chopped broccoli

*1 cup cherry tomatoes (sliced in half)

*1/2 cup diced red onion

*1 diced celery stalk

*2-3 pinches fresh chopped parsley

*12 eggs

*Boccafina™ Abbondante™ seasoning

Preparation:

In a medium fry pan, heat 1 tsp. Extra Virgin Olive Oil and 1 TBSP butter.

Add 1/4 of the chopped and diced ingredients.

Sprinkle with Abbodante™ seasoning

Saute for 2-3 minutes or until browning just begins. Stir with wooden spoon periodically.

Spread ingredients evenly in the pan and add 3 beaten eggs (Hint, a lid can help cook the eggs faster).

Cook until eggs are almost done then add your favorite shredded cheese and fold over.

Serve with fruit and your favorite breafast meat if desired.
